
Fall's Best Fruit
Oh, My Gourd! It's officially pumpkin season!
Although we often think of pumpkins as vegetables, they’re actually fruits! Pumpkins, along with cucumbers, tomatoes, and avocados, come from the flowers of their plants. That makes them all fruits.
They're packed with goodness -- low in fat, calories, and sodium, and made up of 90% water!
One of my favorite pumpkin recipes to make is a dump cake. It's an easy and very tasty treat!
Here’s the recipe:
Ingredients –
1 30 oz. can pumpkin pie mix
1 12 oz. can evaporated Milk
2 eggs
1 15 oz. cake mix – Better Pecan or Spice.
1 stick salted butter
Directions: Dump the pumpkin mix, evaporated milk, and eggs into a large, greased casserole dish or 9 x 13” pan. Whisk until well combined. Stir in the cake mix and melted butter. Bake at 350 degrees until the edges are golden brown, about 45 minutes.
Serve with a scoop of vanilla ice cream.
